77 Days and Counting

Days to Finish My Cooking Class:  77

I’ve been working on Unit 3 for awhile, as I can’t seem to fully embrace the content of the material.  The unit is entirely devoted to steaming vegetables and submersion techniques.  I have always thought steaming vegetables resulted in a bland tasting dish, but I probably should withhold judgment until after I complete the assignments and can taste for myself.

As I proclaimed earlier, this course is the real deal.  Did you know that vegetables get their specific color from the pigment in their cells?  There are 3 categories of pigments:  chlorophyll (green veggies), flavonoids (red, white and some blue), and carotene (sweet potatoes, carrots and squash).  Each group of veggies needs to be treated differently, when steamed, to maintain their color and nutritional value.

I’m feeling a little overwhelmed with the information.

Hopefully I can finish this unit sometime this week and move on.  Even though this course is online, I do have to manage my time so that I finish within the 90 day window.  There are 9 units.  I estimate that I have approximately 10 days to get through each unit.  I think I can pace myself pretty well but, what happens if this course gets any harder?  (insert poopy emoji)

But hey, I’m a grown woman ……. I’ve owned and operated my own business for 31 years, endured hours of labor giving birth to two children without pain medicine, raised them at the lab, and got them to their respective activities and events.  I should be able to handle a little ‘ole cooking course, shouldn’t I?

Uhmmmm ……  I’ll get back to you on that in, uhhh, 77 days!
