My Commencement ………… Sort Of.
Days Remaining to Finish Cooking Class: 7 Final Grade: 98.12% Class Ranking: 39th
May 5th, of 2017, I started an online cooking class, facilitated by the Rouxbe Culinary School and hosted by Forks Over Knives. You might think that a 90 day class translates to three short months, but I beg to differ. It might have been the longest three months of my life.
When I started the class, the protocol for finishing the class was made clear. I had until August 2nd, (around 90 days), to finish all the reading, quizzes, submissions required, and take the final exam.
In all, there were 182 requirements. The final was #182. After I took it, I instantly felt a wave of relief. And…… I finished with 7 days to spare.
That day, I finished work early and, I had been reviewing my notes for about two hours by the time Poo got home. I really wanted to put the test off but I knew, because it was all fresh in my mind, I might as well take the final right away and call it a three-month-er. 🙂
I hadn’t been sleeping well that week and thought, maybe, that was part of it. I have learned, in my Baby Boomer age, that it just doesn’t pay to procrastinate. As Larry the Cable Guy says, “Jus get ‘er done!”

75 questions and 15 minutes later, I couldn’t figure out why I was so apprehensive to take the test. I did miss one of the questions, but ahhhhh …….. if I had gotten a perfect score, I wouldn’t be human. I’m not the super mom I used to be when I was raising my beautiful, talented, and insanely bright girls.
My proud moment and feeling of utter accomplishment continued through the evening. Poo wanted to celebrate and, I can say with complete confidence that, he owns this accolade as much as I.
Men like Poo don’t come around every decade. During those months he stopped at the store to pick up ingredients for me, helped photograph my submissions, complimented the dishes I made, and never complained about the time I spent in the kitchen or on the computer. Yep, he’s da bom.
I don’t know how others celebrate but we usually hit the local mexican restaurant, which happens to be about a mile down the road. And in celebratory fashion …….. you have a darn margarita!

We texted Poo’s sister, Patz, to see if she wanted to join us. She and her friend, Cucumber Boy, came over promptly and without hesitation. I don’t think I roll like that, but she’s the real deal. I just love this woman, she’s got game, I tell you. Frankly, IDK what I would do without her in my life. Aside from my own sisters, she is the one I can trust with anything. Sister-in-laws are just like sisters.

We had a nice dinner and shared a pitcher of The Drink. In this town that I live, these people are my “go to guys,” my “main peeps,” “friends for life,” and I wouldn’t have wanted to celebrate with anyone else.
Poo intended on paying for our celebratory meal but, instead, Cucumber Boy paid. What a nice surprise. 🙂
