Poo’s Homemade Birthday Cake, Made With Love.
One of my fondest memories, growing up, were the homemade cakes my Mom made for my birthday.
If I happened to be around when she was preparing the batter, I would get to lick the bowl, spoon and beaters. Yummmmm 🙂 Of course, that was back in the dark ages when there were no concerns of salmonella contamination.
Each year, as my special day approached, my Mom would ask me what kind of cake I wanted, along with the flavor of icing I preferred. She made a homemade birthday cake for me every year until I graduated. She probably made a few others, after I moved out of the house, when she had the chance.
Not only was the cake choice of importance to me but, also the meal. I was able to choose what Mom would make for dinner on my birthday.
I always wanted tacos!
I still love tacos and would probably eat Mexican every night if it were a realistic option. And, I think Poo would too.
So, when my children were growing up, I gave them the same choices I was granted when I lived at home.
Big Booger didn’t really care too much what kind of cake she had, although she did love chocolate. But the year I made my favorite cake for her, angel food cake with fresh strawberries in whipped icing, which my Mom made for me every birthday, she was hooked and asked for that cake every year afterwards.
Little Booger was a little different. After she discovered TCBY’s frozen ice cream cakes, I don’t think I made another cake for her until she was in high school. I was relieved when she finally outgrew the cake of her choice which was a frozen vanilla cake, layered with cotton candy ice cream and whipped icing. Have you ever looked in the mirror and opened your mouth, or smiled, after eating cotton candy ice cream? If not, I’ll be happy to clue you in, ………. all you will see is an obnoxious blue color. Teeth, tongue, lips …….. all blue!
I still love to make cakes for special occasions. I might be misguided in my train of thought but, for me, nothing says love like the time and effort it takes to craft something special by hand. Cakes are no different.
Poo just had a birthday and I wanted to make him a special cake. He loves dark chocolate so I scoured my “go to” recipe site (Pinterest) for a heart healthy cake.
Viola!

Yaaaa ……… mine didn’t exactly turn out to look like the picture.
Even though I used dark chocolate, it didn’t have that rich, dark chocolate color like the one featured. I guess I need to master the photography portion of blogging?
Poo loved his birthday cake, which is what matters the most. 🙂
